Strawberry Salsa


G thought this was too hot (he wasn't expecting the jalapeño!), but I liked the touch of fire.  We just ate this with our "healthy" tortilla chips, but it would probably be really good with a meat dish - it reminded me of mango salsa.  I'm not sure if I'd make this again unless I was looking for something unique, because I think I still prefer regular salsa, which is so much cheaper to make.


What You Need


2 cups diced strawberries

1 diced avocado

1/2 diced onion

1 seeded and diced jalapeno

juice and zest from 1/2 a lime


What You Do


1.  Combine all ingredients in large bowl.

2.  Let sit for several hours/overnight in refrigerator to allow flavors to meld (or just eat it right away like we did, because we're too impatient for that).


Although we're not vegetarians, we don't really ever eat meat, so I'm interested to hear if this is as tasty as I suspect with a meat dish.  If you try it, let me know!  Comment here or email me at lisahealy (at) outlook (dot) com.
