Strawberry Snack Pockets

Another tasty use of my new dough press kit - this time trying out some sweet snack pockets!

I tried out a recipe I'd found online, but the dough was a huge mess, so I just went back to my good old whole wheat pastry dough for the bread maker.

The recipe I originally tried also used vodka in both the dough and the sauce, but we decided that would make everything too sweet, so I just cut it out.

Good Whole-Wheat Pastry Dough Recipe Using a Bread Maker (Get one here)


What You Need

1/4 cup water

1 extra-large egg

3/4 cup plain yogurt (helps the gluten to relax, since you're using whole wheat)

2 Tablespoons unsalted butter

3/4 teaspoon salt

2 Tablespoons brown sugar

2 1/2 cups whole-wheat flour

1 cup bread flour

2 1/4 teaspoons dry yeast

 

What You Do

 

1.  Dump everything into your bread maker, select "dough cycle," and walk away.

2.  Punch down the dough when it's finished and let rest for 5 minutes while you mix up the filling. 

Pocket Filling

What You Need


3 cups chopped strawberries

1/8 cup honey

2 Tablespoons water

1 Tablespoon lemon (or lime) zest

1 teaspoon vanilla

 
What You Do 

1.  Combine strawberries, honey, water, and zest in a medium saucepan over medium-high heat.

2.  Bring to a boil (stirring frequently) and then reduce heat and simmer for 20 minutes, or until thickened.

3.  Remove from heat and stir in vanilla.  Let cool to room temperature.


4.  Divide dough in half.  Roll out to 1/8-inch thickness on a lightly floured surface and then use the back of your pocket tool (Get yours here) to cut out dough circles.

5.  Put a dough circle on your pocket tool, fill with a spoonful of strawberry filling, then close to seal.

6.  Place sealed pockets on a baking sheet and bake at 425 degrees for 15 minutes or until lightly browned. 
We took these along with us on our last camping trip and they were a great grab-and-go breakfast before heading out on a hike!  I bet they'd also be an easy treat to take along on a picnic!  What do you think?  I'd love to hear - leave a comment or email me at lisahealy (at) outlook (dot) com.
