Sunny Tot Bites

If you've been hanging around here for any length of time, you know that we're big fans of all sorts of healthy snack foods.  

But recently, I wanted to have something on hand that would do double-duty:  something easy to grab for a quick snack, but also decent enough to be a meal if I was in an even-lazier-than-normal mood and just wanted to make a ginormous salad for dinner and nothing else.

Now, Gv will eat all sorts of things you wouldn't expect a preschooler to consume, but raw lettuce is not one of the items on that list.

That means that my lazy-salad-only nights end up not quite as lazy as I'd like, since I still have to figure out something different to fix for our little anti-greens gal.

Ha!  But I've got a new secret weapon - these Sunny Tot Bites!

They're ridiculously simple to make, freeze easily in a zippered bag, and heat up in no time flat in the toaster oven (you have managed to get yourself a toaster oven by now, haven't you?)

I usually make a mixture of mini- and regular-sized tots so that I can use them for both snacks and dinners, but you might prefer to keep all the same size of tots on hand at your house instead.



What You Need


1/2 cup cooked quinoa

1/2 cup cooked millet (or use more quinoa, or substitute some other grain)

1 cup shredded cheese (I used cheddar)

1/2 cup shredded carrot

1/2 cup chopped spinach

1/2 cup corn

1/2 cup finely chopped onion

1 clove minced garlic

1/2 teaspoon salt (feel free to add in a few shakes of your favorite herbs, as well)

1 egg



What You Do


1.  Grab a big old bowl and dump all the ingredients in.  Mix everything up and then fill a mini-muffin tray and/or liners like these.  Be sure to mush everything down really well to help it stick together.


2.  Bake for about 20 minutes at 350 degrees.

I'm a huge fan of on-the-go protein snacks/meals. My toddler and I have busy schedules some day, so it's hard to keep up with meals sometimes. I love this idea, however. It's a great way to fill up those hungry tummies when we're on the run, but also a fantastic way to hide veggies for the picky eaters as well. Pinning and saving for later. I'm glad you like this idea, Maria! That's exactly why I've spent so much time coming up with all these different on-the-go, healthy snacks! We're not out and about as much as a lot of other families, but the days we're gone, we're racing around and need nutritious food on the go!

Our little Gv will eat ANYTHING, but she can be picky about whenshe'll eat it, so anything that's fun or snack-y like this is a win in my book! I hope your picky eaters gobble them up and I'm so glad you stopped by to say hello!

Coming across this recipe comes at a good time. I feel like sometimes I get in a snack rut with my growing 7 year old who is constantly asking for snacks this summer. Plus my son is just starting to self-feed and I'm thinking these will be a good snack for the both of them. They sound good to me too.

These look delish! They would be great for the kids, but they would be great with a salad on the side, or as an accompaniment to a salad or soup. And a great way for me to feel like I'm having a bread type product without actually having bread! Right up my alley. Thanks!
