These easy enchiladas are great for just those times!

I'm always happy to throw some something into a tortilla (refrigerator clean-out, anyone?), cover it with cheese and salsa and call it dinner, but sometimes I actually want to take a little more time to make a dish with a little south-of-the-border flavor.
These enchiladas were so easy to throw together and I'd thought we'd have plenty of leftovers, but they were so good, we ate every single one of them in one sitting!
What You Need
Tortillas (Of course, you know my crazy self has to make these from scratch, but you could completely use a pre-made package, as well. You really should try making your own sometime! These Totally Terrific Tortillas are my favorites -- not difficult, but they are time-intensive. If you want quick and easy, these Crazy Quick Tortillas are your best bet!)
Cream of Chicken Soup (The canned stuff will work just fine, but this homemade version is so easy and doesn't include any gunk, so you should really give it a try!)
Enchilada Fillings (Go traditional with something like cheese and chicken, or get a little spunky and fill them with things like corn, sweet potato, onion, garlic, salsa or any kind of beans)
Enchilada Filling Spices (We pretty much stick with chili powder & cumin)
Cheese, cheese, and more cheese
Diced tomatoes and sliced green onions, if you want to be all fancy (You know I skipped these, right?)
Note: You noticed the absence of quantities here, right? That's because these enchiladas really don't need specific amounts -- go with whatever you have on hand and add either a little or a lot of the seasonings (Absolutely no clue how much to add? Start with 1/2 teaspoon of each.)
What You Do
1. Cover the bottom of your baking dish (I used a lasagna pan, packed that baby full and still wish I'd made more!) with half of the cream of chicken soup. (You'll need at least a can, maybe two of this. My homemade soup recipe was just perfect for my one giant lasagna dish, so if you want more, double it.)
2. Fill your enchiladas with whatever you want, sprinkle a bit of the seasonings inside before rolling them up and placing them, seam down, in your dish.
3. When you've crammed in as many tortillas as you can, pour the rest of the cream of chicken soup over the tops of the tortillas. Cover with foil and bake for 45 minutes at 350 degrees.
5. Let this cool for just a bit when you take it out of your oven (I never wait long enough to dive in and always burn the roof of my mouth!) Pour some salsa over the top and then see if you can manage to avoid turning into piggie-pigs like us and save some for leftovers.
I doubt we'll ever have leftovers.
