Strawberry Salmon

I tend to be "salmoned-out" most of the time, since we have so much of it and G kept pushing encouraging me to eat it while I was pregnant with Gv.  We've recently tried doing some different things with the fish to make it more interesting, but mixing it with strawberries seemed a little too unique for either of us.  Our curiosity got the best of us, however, and we went ahead and tried it...  

Wow.

We were so very glad we did - this might be our new favorite meal!

Seriously, this was not only the most delicious thing we've eaten anywhere in a long time, but it looked so beautiful and fancy on the plate!  This recipe will definitely be top of the list for any future dinner gatherings we have!

Although the recipe includes several steps, it was really very simple to do and not all that time-intensive - at least for any active cooking work you have to do.

Salmon

What You Need


 5 6-ounce salmon fillets

olive oil

sea salt

black pepper

What You Do


1.  Arrange your fillets on a tray or dish for your oven (I use my convection toaster oven whenever I can - it saves money!  Get an awesome one here.)

2.  Drizzle some olive oil over the fillets, then lightly cover with salt and pepper.

3.  Bake at 350 degrees for about 20 minutes.

4.  Make the sauce and dressing.  After the 20 minutes is over, pour the sauce over the salmon and bake for an additional 10 minutes.

5.  Place a salmon fillet on a plate, spoon some of the sauce back over it, then drizzle with the yogurt dressing.

Strawberry Sauce

What You Need


3/4 cup balsamic vinegar

1 cup fresh chopped strawberries

1/4 teaspoon vanilla

1 teaspoon honey

2 Tablespoons strawberry preserves (I just used leftover sauce I had from this)

1 teaspoon Dijon mustard (or this homemade mustard)

2 teaspoons hot sauce

1/4 teaspoon garlic powder


What You Do


1.   Combine all ingredients and cook on medium until boiling.

2.  Reduce heat to low and continue to cook until thickened, about 15 minutes.

3.  Reserve 2 Tablespoons of sauce for yogurt dressing.

4.  Pour rest of mixture over salmon after initial 20 minutes baking time.

Yogurt Dressing

What You Need


1/2 cup plain yogurt (make your own!)

2 Tablespoons olive oil

2 Tablespoons reduced strawberry sauce

salt

black pepper

What You Do


1.  Mix all ingredients well, adding salt and pepper to taste.
