Strawberry-Lime-Poppy-Seed Pancakes


Inspired by my recent lime-poppy-seed cupcakes, I tried a twist on this already-twisted pancake recipe.  I'm not a huge fan of pancakes, but these were really good.  I loved the strawberry syrup, but I think it overshadowed the pancakes (which were a lot of work) a bit.  I tried the pancakes by themselves and they were definitely tasty, but I think in the future I might just make regular whole-wheat pancakes and the strawberry syrup and save the other ingredients for muffins or cupcakes.

If you're a pancake connoisseur and looking for something a little different, give these a try.  Even if you're not, you should absolutely try this syrup!


Syrup



What You Need


1 1/2 cups diced strawberries

1/8 cup sugar

1/2 cup water

1/2 teaspoon vanilla

1 Tablespoon honey


What You Do


1.  Heat ingredients over medium heat until sugar is dissolved, stirring frequently.

2.  Use an immersion blender to purée mixture.

3.  Adjust temperature to low and allow to thicken as you make the pancakes.


Pancakes


What You Need


1 1/4 cups whole wheat flour

1 1/2 Tablespoons poppy seeds

1 teaspoon baking powder (see how to make your own here)

1/4 teaspoon baking soda

1/4 teaspoon salt

1 Tablespoon honey

juice of 2 limes

1 cup buttermilk (I used almond milk and 1 Tablespoon of vinegar)

1/2 teaspoon vanilla

1 egg

1 1/2 cups diced strawberries


What You Do


1.  Mix flour, poppy seeds, baking powder, baking soda, and salt in large bowl.

2.  Whisk together honey and lime juice.

3.  Add milk, vanilla, and egg to honey/lime mixture and incorporate well.

4.  Add wet ingredients to dry ingredients until mixed (batter will be lumpy); then stir in strawberries.

5.  Heat pan to medium heat (I used my electric skillet set at 350 degrees) and pour pancakes, using about 1/3 cup of batter for each.  When edges are very dry and starting to release from the pan, flip pancake and then cook for another few minutes.

Pancakes are dark due to whole wheat.  Dark spots are strawberries, but they weren't burnt at all, even though they looked a bit like it.


To Serve:


Drizzle warm strawberry syrup over pancakes.
