These soft cookies combine the taste of strawberry shortcake into a bite-sized treat! If your strawberries aren't super-sweet, you might want to increase the amount of sugar to 1/4 cup.
What You Need
1 cup chopped strawberries
1 cup whole wheat flour
1 teaspoon baking powder (see how to make your own here)
1/4 teaspoon salt
1 Tablespoon honey
3 Tablespoons cold butter
1/3 cup plus 1 Tablespoon heavy cream
What You Do
1. Stir the flour, baking powder, salt and sugar in a medium bowl until blended.
2. Cut the butter into the flour mixture (I found it easiest to just use my hands to rub the butter throughout so that it was evenly mixed).
3. Add the cream and strawberries and stir just until combined.
4. Portion out 12 mounds of dough onto a cookie sheet.
5. Bake for 30 minutes at 350 degrees.
6. Cool the cookies immediately on a wire rack and serve fresh!
