Remarkable Rainforest Cookies

I've mentioned before that even though we don't have very sweet teeth around here, we still like our dessert.

"Healthy" cookies are our typical favorite dessert as a family, and these munchable delights completely fall into that category.

I came across the idea for these while Gv and I were doing our Latticed Learning study of jungles and rainforests - since so many of this cookie's ingredients can be found in such a humid environment, they've been dubbed "rainforest cookies."




What You Need


2 1/4 cups whole wheat flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

1/2 cup soft butter

1 ripe banana

1/3 cup honey

2 teaspoons vanilla

2 eggs

1 cup unsweetened coconut flakes

3 cups chocolate chips

1 cup chopped cashews



What You Do


1.  Combine the flour, baking soda, salt and cinnamon in a bowl.

2.  Cream the butter, banana, honey and vanilla in another bowl.

3.  Add eggs and coconut flakes to the butter bowl.

4.  Mix the flour mixture into the egg mixture, in batches.

5.  Stir in the chocolate chips and cashews.

6.  Drop onto a cookie sheet lined with a baking mat and bake 10-15 minutes at 375 degrees.

  1. I have to laugh. When I was not much more than a kid just starting out, I made up a cookie very much like this one except I used applesauce instead of banana. I called them kitchen sink cookies.
