Gv loves cauliflower.
Like, seriously, she'll request it for dinner and eat an entire 1-pound frozen bag of the stuff -- sometimes even still frozen!
Even though I love that she digs this cruciferous veggie so much, I would like things even more if she got a little more variety into her diet, so I came up with this soup.
And the bonus is, it turned out soooo good, so now G and I have a new favorite to drool over, as well!
What You Need
2 diced onions
a handful of minced garlic (or 3 cloves, if you're not garlic fiends like we are)
1 diced carrot
2 pounds frozen cauliflower
2 quarts chicken stock
2 teaspoons thyme
1 teaspoon salt
1 teaspoon pepper
oil

What You Do
1. Cook the onions in oil until soft.
2. Add in the garlic and cook a couple more minutes.
3. Dump the onions and garlic into your pot, along with the rest of the ingredients.
4. Bring to a boil, then simmer until you're ready to Zub with an immersion blender. Serve with a yummy bread like this or rye.
