Granola Goodness

Just like my power-packed protein bites, this granola mix is a pantry staple in our house (and a fantastic food to bring along on a camping trip!)  It allows for so much variety and is a snap to whip up.

What You Need:


10-ounce box of pitted dates (I've also used other dried fruits, like figs)

1/4 cup honey (although usually I omit this completely)

1 cup chopped almonds or other nut

1/4 cup nut or seed butter

1 1/2 cups steel cut oats (can also use rolled oats, or a mixture of both)

Add-ins:  wheat germ, flax seed or meal, hemp powder, vanilla, chocolate chips or dark chocolate, Craisins or other dried fruit, shredded coconut, toffee chips...can you think of any others?


What You Do:


1.  Dump everything in your food processor (I love my new one!) and grind away.


2.  Stick the mixture in a container and chow down.


I made this recipe as bars the first few times, but quickly realized that we prefer to just stick it in a container and eat it with a spoon - we even like to grab it to bring along with us went we're out and about!  We just portion it into smaller containers and include a spoon for an easy snack while we're traipsing about.

Our favorite way to eat this is sprinkled over some creamy homemade Greek yogurt - it's Gv's most-requested breakfast, and probably mine, too!

If you'd rather have your granola as bars, then you can press the mixture into an 8x8 pan and refrigerate it, or even bake it a bit first to get it to retain the bar shape.

Oh, funny, because I doput both hemp and chia seeds in it! I pretty much add those, flax and wheat germ to everything. I can't wait to hear if you try making this yourself!
