Bountiful Blueberry Salad

As I said last week, over a year ago we went blueberry picking.  I made all my planned recipes, but most of the posts never got published.  Today, I'm sharing one of those lost posts with you.

This isn't so much a "recipe" as it is an idea.  But I'd never had blueberries in a salad before and it was just so yummy and beautiful, I had to tell you about it.

What You Need


12 ounces baby spinach (or other greens of choice)

2 cups fresh strawberries

1 cup feta cheese

1 cup walnuts

1/2 a sliced red onion

What You Do


1.  Combine salad ingredients in a large bowl and toss.  See, not so much a recipe, is it?

2.  We usually just have this with our typical salad topping of olive oil and balsamic vinegar, but if you're looking for a fancier dressing, this one is really tasty with berries!

My husbands loves eating strawberries and blueberries in his salad. I like it too, but the kids aren't quite on board yet...lol. They like their fruit sweet and not savory.

We've gotten to the point where we prefer the flavor of fruit over something like fresh tomato (even though that's technically a fruit, too) in our salads. We don't use salad dressing (just oil & vinegar), but add a TON of garlic, so the sweet gives it all a nice balance. Thanks so much for stopping by to say hello today!
