Avocado Quinoa Brownies

I've mentioned before that even though we don't have very sweet teeth around here, we still like our dessert.

I often bake up a batch of "healthy" cookies, but I also like to do the same thing with brownies and add in a few unconventional dessert ingredients.

Sometimes I use beans, sometimes I use bananas, and sometimes I use avocado and quinoa!

These brownies are really easy to make - and by including protein-packed quinoa and fabulous-fat avocado, you don't even have to feel guilty for sneaking some for breakfast the next morning (What? Me? Brownies for breakfast? You bet!)




What You Need


1 avocado (doesn't really matter what type, but I used a haas)

1/4 cup coconut oil

1/3 cup honey

1 egg

2 teaspoons vanilla

1 cup cooked quinoa (you could also use millet, which is often cheaper)

3/4 cup whole wheat flour

1/4 teaspoon salt

1 teaspoon baking powder (see how to make your own!)

1/2 cup cacao powder (you can use cocoa, too)

1/2-3/4 cup chocolate chips


What You Do


1. Mix together the avocado through quinoa in a bowl.

2.  Mix together the other ingredients in another bowl.


3.  Combine the two bowls.


4.  Dump the concoction into an 8x8 pan and bake for 20 minutes at 350 degrees.  Stab a knife into the middle to make sure it's done (comes out clean).
