OMW (Oh My Word!) Sweet Potato Waffles

Last week, I shared my own special version of Chicken and Waffles with you.

That meal is absolutely delicious just as it is, but we try not to eat regular potatoes very often around here and instead try to go with a healthier sweet potato option.

So of course, I had to make the same meal again the next week, but substitute sweet potato waffles for the plain ones.

Oh. My. Word.

I never would have dreamed that these would be even more delicious than already delicious mashed potatoes, but they were.

Ooohhh, they so were:





What You Need


1 chopped onion

3 cloves (or more) minced garlic

2-3 sweet potatoes

1/4 cup yogurt (you can always make your own!)

2 eggs

1/3 cup whole wheat flour

3/4 teaspoon baking powder

salt & pepper (at least 1/2 teaspoon, maybe more)

1 teaspoon sage (if you don't like sage, just leave it out)



What You Do


1.  Get your potatoes boiling in a pot while you cook up the onion and garlic (in a bit of oil) until they're soft.

2.  Mash your potatoes in a big bowl, then mix in the onion and garlic along with the yogurt, flour, baking powder, eggs, sage, salt and pepper.

3.  Dump clumps onto your waffle iron (see the regular potato waffle tips if you haven't made them before) and cook until they're as crispy as you'd like.
