Pumpkin Power Cookies

We're still in the thick of pumpkin season and these cookies are one of the yummiest ways to get your fix.  

The best part is, they're actually pretty healthy!  I won't tell anyone if you have a few of these treats for breakfast!

These cookies have become our latest binge food!  I've made them a few times as just a variation of a chocolate chip cookie, but the other day, I added in some heart-healthy oats and that made them even better!

It's up to you, try them with the oats or without, just be sure to try them!



What You Need


1 cup pumpkin puree

1/2 cup honey

3/4 cup butter

1 egg

2 cups whole wheat flour

1 cup steel-cut oats (old-fashioned oats would work, too)

2 teaspoons baking powder (are you making your own?)

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ground cloves

3 teaspoons vanilla

4 teaspoons arrowroot (or cornstarch)

2 cups chocolate chips



What You Do



1.  Cream the pumpkin, honey and butter in your stand mixer.

2.  Add in the egg, then everything else except the chocolate chips.

3.  Throw in the chocolate chips and just get them mixed in.

4.  Drop them onto one of these resting on your baking sheet (How big? Well, how big do you like your cookies?  I usually squeeze 3 dozen onto 2 baking sheets, but you do what works best for you!) and bake for 20 minutes at 350 degrees. 

When the oven timer finally dings (didn't you wonder if it ever would?), then let them rest for a bit before you dig in.

Scarf a few down for dessert, but don't be afraid to sneak a few more for breakfast the next morning!
