I've mentioned before how one of my absolute favorite goodies at Christmastime is anything eggnog.
Forget pumpkin-everything. I spend this time binging on eggnog-everything.
Pancakes, waffles, muffins, bread, cookies, cheesecake, tarts, you name it, if it might work with a little splash of eggnog added in, I'm probably making it.
I've actually never had an eggnog-something recipe turn out badly, but there are a handful that I absolutely have to make every year because they're so incredibly delicious. My system craves it more often, but just can't take the overload more frequently than that.
These eggnog cookies are one of those favorite recipes - and after years of making multiple batches of several different great eggnog cookie recipes (so much work!), I've created this amalgam version, which means I can now make massive amounts of these tasty treats in less time!
Like my incredible eggnog cheesecake, this is one yummy dessert that you'll love so much, you just might not want to share.
But I promise that if you can manage to share it with family and friends this festive season, your little heart will grow at least three sizes!
What You Need
1/2 teaspoon baking soda
1 teaspoon + 1/2 teaspoon nutmeg
1 teaspoon + 1/4 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup + 5 Tablespoons eggnog
1 egg
2 sticks butter
1/4 cup brown sugar
1 teaspoon vanilla
3 cups powdered sugar
What You Do
1. Mix flour, baking soda 1 teaspoon nutmeg, 1 teaspoon cinnamon and 1/2 teaspoon salt together and set aside.
2. Mix 1/2 cup eggnog, egg and vanilla together and set aside.
3. Cream butter and brown sugar together until fluffy.
4. Add in the flour and eggnog mixtures in batches, alternating with each other.
5. Divide dough into quarters and stick in fridge until firm (a few hours).
6. Roll out dough, cut out and place on baking mats. Bake for 10 minutes at 375 degrees.
7. Mix powdered sugar, remaining nutmeg, cinnamon and eggnog together, then use this to ice the cooled cookies.

Even though I could totally devour dozens of these cookies on my own, I always at least double this recipe so that I can force myself to share plenty of these goodies with family and friends (and then go make more three days late because I just can't get enough!)
