Smashed Avocado & Bean Sandwich

I've been in a sandwich sort of mood lately and wanting something along the lines of chicken or tuna salad, but we don't buy meat at home, so those ideas weren't going to work.  I don't like eggs, so egg salad was out.  I ate peanut butter and jelly for lunch every day for pretty much my whole life, so that idea wasn't too appealing to me, either.

We did, however, have several avocados...and black beans...  

We always have black beans.

I got to thinking that I could probably mix up some sort of bean-avocado salad sandwich pretty easily, so I tried it out.

Mmmm...it's been our newest binge food.  If I get tired of this version, I might try adding a little lime and cumin to the recipe, but for the moment, I'm keeping it the way it is because it's super-simple and yummy, yummy, yummy!

What You Need


1 cup black beans (learn how to cook your dried beans here)

1 cup ripe avocado

1/2 diced tomato

1 teaspoon garlic powder

dash of salt

4 slices of homemade bread like this or this (or even 2 homemade tortillas, if you'd prefer a wrap)

What You Do 


1.  Dump everything into a bowl and mash it all up, or be lazy like me and throw everything into a Ninja and let it do the work for you. (Get yours here)

2.  Spread the mixture onto your bread or tortillas to make 2 sandwiches.

3.  Make sure you have plenty of napkins handy, because although this is tasty, it is mess-y!
