Spinach, Chicken & Cheese Sandwich

I spent my entire life eating peanut butter and jelly sandwiches for lunch.

Like, seriously, I ate it every day.

Right up I had Gv and started staying home.

Eating PB&J every day gets old, people.  It gets old.

But sandwiches are such an easy go-to for lunch, so I'm always trying to come up with some interesting combination (like this or thisto make them more exciting.

I've just created a delicious new sandwich and if you like the ingredients I used at all, you have to try it.

Cook up the spinach and chicken on the weekend and you've got lunch for the whole week!





What You Need




1 chopped onion

3 minced garlic cloves

1 pound spinach

1 rotisserie chicken, shredded

plenty of this cheese

a loaf of yummy bread like this 



What You Do



1.  Cook your onion in some oil until soft.  Add in the garlic for a couple of minutes, then add in the spinach until it's all warm and the liquid is just about gone.

2.  Make your sandwich.  Heap plenty of the spinach mixture on one slice of your bread, then slather the cheese on the other.  (Instead of slicing the cheese, I let mine sit for a bit to get all soft and spreadable).  Cover the spinach mixture with as much shredded chicken as you'd like.

And there you go - a great alternative sandwich that's healthy and filling!

Well, YUM! :) That looks delish. Thanks for sharing the recipe. I get bored easily with food, so it'd be hard for me to eat the same thing every day. A sandwich is always perfect for a quick lunch. This recipe reminds me of Spanakopita with much less work. I also like that you can put it together and use it over a couple of days. Thank you for sharing your recipe idea.

What a great combo! I have not been a huge fan of PB & J, you are a trooper! My husband and son could eat them everyday and not bat an eye, but I need something like this chicken, spinach and cheese combo! Delish.

Many times I use left over chicken for sandwiches I have never actualy added spinach. So thanks for the idea and for sharing at the Pit stop !
